Add to water and boil it for about 30 minutes. | Sauce: In a frying pan, add pork fat, diced onions, achiote, and then the peeled iguana. Finally, add epazote. 🇲🇽TAMALE: In a bowl, mix mashed corn, pork lard, and salt. Flatten on a banana leaf in a circle. Add the iguana sauce in the middle and wrap it in the banana leaf. Place on the grill for 40 minutes. 🇲🇽BAGDER/COATI: Skin the badger and chopt it. In a pot, add meat, orange citrus, onions, green pepper, local green chili, sweet chili, and garlic. Place on the grill and add oil, then fry for 30 minutes. 🇲🇽CHACHALACA: Gut and clean the birds. In a big bowl, squeeze orange citrus, add pepper, and salt, then skewer. Separately, in a pot, add water, onion, and leaves.
